Sometimes you just need a little satisfying chocolate to boost your energy and your mood in the afternoon. These dark chocolate sunflower seed butter brownie bites strike just the right balance. Make them ahead of time for busy weeks or travels. Being prepared with your own healthy snacks will provide you with sustained energy between meals.
- 1/2 cup raw pumpkin seeds or sunflower seeds
- 1/2 cup raw oats
- 8 Medjool dates, pitted
- 1 cup 88 Acres Dark Chocolate Sunflower Seed Butter
- 3/4 teaspoon kosher salt
Add pumpkin seeds and oats to the bowl of a food processor and pulse until roughly chopped.
Add dates, Seed Butter, and kosher salt to the food processor and blend until ingredients are finely broken down and dough holds together when pressed between two fingers. If dough is too dry, add another date or two.
Scoop dough into the palm of your hand using rounded tablespoons or a 1-ounce disher. Roll the dough into a ball and place on a parchment-lined tray. Refrigerate dough balls until ready to serve.
