Special enough for a celebration, but simple enough to make before coffee.
Serves 2-3
Ingredients
- 1 cup milk of choice
- 3 tablespoons 88 Acres Vanilla Spiced Sunflower Seed Butter
- 1 heaping tablespoon ground chia seeds*
- 4-5 slices hearty bread (we used artisan sourdough, but use your favorite loaf)
- 1-2 teaspoons of neutral oil
*If you have whole chia seeds, just throw all batter ingredients into a blender before letting it thicken.
Directions
Combine milk, Seed Butter and ground chia seeds in a shallow, medium-sized dish. Whisk thoroughly to incorporate the Seed Butter. Let stand 10-15 minutes to allow the chia seeds to thicken the batter.
Heat a nonstick skillet over medium heat and add a few drops of neutral oil to coat the pan. Working one slice at a time, Add the bread to the batter, letting it soak for 10-15 seconds before flipping it over and soaking the other side.
Place soaked bread into the center of the skillet and cook until golden brown before flipping - it should take about 3-4 minutes each side. If the toast sticks to the pan, let it sit for another minute. It will release more easily as the batter cooks through.
Top with fresh fruit, homemade chia jam, yogurt, whipped cream, maple syrup or a dollop of Seed Butter and enjoy!
