Our favorite part of summer is the delicious, home-cooked comfort food that brings everyone together. And as the weather heats up, there's no better way to start your day than with these refreshing Summer Berry Breakfast Pops.
These frozen pops are layered with fruity purees mixed with a little bit of milk. Feel free to use any milk that suits your family’s diet. We added fresh blueberries and a heaping tablespoon of Seed'nola or a crumbled Seed + Oat Bar to every pop for some freshness and crunch.
- 5-6 large strawberries, stems removed
- 1 banana
- 1 cup milk of choice, divided
- 1/4 cup blueberries
- 1/4 - 1/2 cup 88 Acres Triple Berry Seed'nola or crumbled Triple Berry Crumble Seed + Oat Bars
- Ice pop molds (or ice cube trays or small plastic cups with wooden ice pop sticks)
In a small food processor, blend strawberries and 1/4 cup of milk until smooth. Transfer to a bowl or mason jar.
Rinse out the food processor and blend the banana and the rest of the milk until smooth.
In an ice pop mold, spoon 2-3 tablespoons of the banana mixture into the bottom, depending on how large your molds are. Add 3-4 blueberries to each mold. Freeze for 1 hour.
Next, add a layer of strawberry puree and freeze for another hour.
When the tops of the strawberry layers are frozen, distribute the rest of the banana mixture into the ice pop molds and top with a big spoonful of Seed'nola. Add ice pop sticks and press them into the frozen strawberry layer for stability. Freeze until solid.
When ready to serve, remove ice pops from freezer and place the bottoms in a warm water bath for 30 seconds or until the pops slide out of the molds easily. Be very careful to not get water inside the molds. Enjoy!
