There’s nothing quite like the indulgence of dessert for breakfast. These Nice Cream Sandwiches offer the best of both worlds with creamy frozen banana “nice cream” stuffed between a chewy 88 Acres Seed Bar. All the nutrition of breakfast, plus all the fun of dessert! This recipe is super easy and is perfect to make ahead of time, so load up the freezer with these tasty summer treats.
Ingredients
- 2 88 Acres Seed Bars (any flavor)
- 1 large banana, frozen
- 2 tablespoons milk of choice (we used hemp milk)
Directions
In a food processor or high powered blender, add the frozen banana and milk. Process on low until the mixture is smooth and creamy. Transfer to a container and freeze for 1 hour.
When the banana nice cream is scoopable, it’s time to prepare the Seed Bars. Tear off a piece of parchment paper and fold it in half with the Seed Bar in between the two layers.
Using a rolling pin (or a full wine bottle), roll the bar out until it’s about ¼ inch thick. Cut the rolled out bar in half so you have two squares.
Spoon a scoop of banana ice cream into the middle of one half of the bar and then top with the other half, pressing down.
Freeze for another 30 minutes and then they're ready to enjoy! Pull them out of the freezer on hot days for a cool treat to start the day off right.
