Nothing celebrates summer better than grilled vegetables. And nothing elevates the flavors of fresh vegetables better than an herbaceous marinade. We marinated summer squash, zucchini, bell peppers, and onion in our Garden Ranch Dressing, but feel free to use whatever seasonal produce you can find at your farmer’s market or local grocery store. While marinating requires you to think a few hours ahead, the reward of deeply flavorful, moist, and tender vegetables is well worth it. This recipe makes about 10 skewers, depending on how you cut your veggies, so scale the recipe according to the size of your gathering, by estimating 2-3 skewers per person if served as a side.
- 2 medium summer squash
- 1 medium zucchini
- 2 bell peppers
- 1 red onion
- 1/2 cup Garden Ranch Dressing, plus more for drizzling
Chop all vegetables into roughly 1”x1” sized pieces and place into a large Ziploc bag or glass or food-safe plastic bowl.
Pour Garden Ranch Dressing over vegetables and toss thoroughly to coat. Let the veggies marinate in the Dressing for 30 minutes to 2 hours. The longer it sits, the more the flavors will meld with the veggies.
When the veggies are almost done marinating, preheat your grill to medium-high heat.
Skewer vegetables on metal or wooden skewers that have been soaked in water for 30 minutes. Soaking wooden skewers in water prevents them from burning on the grill.
Grill for 8-10 minutes per side or until the veggies are lightly charred and tender.
Let cool slightly, then enjoy alongside your favorite summer meal, drizzling extra Garden Ranch Dressing on top if you want.
