Mashed potatoes are mashed potatoes are mashed potatoes, right? Wrong. We’ve tossed out the heavy cream to make room for our Garden Ranch Dressing in this vegan twist on the homemade classic. If you’ve never made homemade mashed potatoes before, fear not––it’s actually quite simple. With herbs and plant-based creaminess already in the Dressing, your task is much easier (and healthier), making the final product well worth all the peeling and mashing.
INGREDIENTS
- 3 large russet potatoes, peeled and chopped into 3/4 inch cubes
- 3 cloves garlic, peeled
- 1/2 cup 88 Acres Garden Ranch Dressing
- 1 cup non-dairy milk (unsweetened)
- 2 tablespoons vegan butter (optional)
- Salt and pepper to taste
DIRECTIONS
Fill a large pot with water, add the potatoes and a large pinch of salt and bring to a boil. Cook until fork-tender. Remove from heat, drain potatoes and return to pot.
Use a fine grater or microplane to grate garlic into the potatoes, then mash potatoes with potato masher. Toss in butter, if using.
Pour in Garden Ranch Dressing and mix with a spoon. Stir in oat milk slowly, adding enough milk until you’ve reached your desired mashed potato consistency. Taste and season with salt and pepper.
Serve warm with more Garden Ranch Dressing drizzled on top if desired!
