We took a classic picnic favorite and gave it an 88 Acres twist. While most potato salad recipes call for loads of mayonnaise, we forgo all dairy and instead coat small yellow potatoes with our Green Goddess Dressing. Swap out hydrogenated oils and saturated fat for plant-based protein in this simple potato salad recipe. The best part is that if you know how to cut a potato in half and boil water, you can make this recipe in under 20 minutes.
- 1 pound small potatoes (baby Yukon, new potatoes, or fingerling), sliced in half
- 1 tablespoon salt
- 1/2 cup Green Goddess Dressing
- 1/4 cup scallions, sliced diagonally
- 1/4 cup finely chopped parsley
Fill a medium pot 2/3 full with water. Add salt and potatoes and bring to a boil. Cook potatoes until fork tender, about 15 minutes.
Drain potatoes and add them to a medium sized mixing bowl. Add Green Goddess Dressing and toss thoroughly.
Add potato salad to a serving dish and top with scallions and parsley. Can be enjoyed warm or cold, preferably on a picnic blanket.
