Ingredients
- 1/2 cup 88 Acres Pumpkin Seed Butter Unsweetened
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh spinach, lightly packed
- 1 clove garlic, smashed
- 1/4 cup shallot, roughly chopped
- 1 lemon, juiced
- 1 teaspoon apple cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup water, to thin if desired
Directions
Add all ingredients, except water, to a blender or food processor. Blend until smooth (dressing should be smooth in consistency and light, creamy green in color).
Add water in small increments, blending in between additions, until you reach a pourable consistency. (*Use less water to make a veggie dip consistency.)
Enjoy with fresh, sliced veggies or drizzled on top of a salad! Store in a sealed container in the fridge for about a week.
